Montelobos Espadín was created with the aim of showing the complex but perfect balance between the four basic flavor profiles in artisanal mezcal: green agave, cooked agave, smoke and wild fermentation.

MAESTRO MEZCALERO

Third distillation with turkey by Iván Saldaña and Guadalupe García.

  • TYPE OF AGAVE AND CULTIVATION

    Organically cultivated Espadìn.

  • TYPE OF COOKING

    Conical underground stone pit oven fuelled with encino and pine wood.

  • MILLING

    Milled with a traditional single stone tahona pulled by mule.

  • FERMENTATION

    Wild fermentation in open pine wood vats (not yeast or nutrient added).

  • DISTILLATION

    Copper still distillation heated with direct firewood.

Montelobos Espadín was created to enhance the complex, yet perfect balance of the four basic flavors in artisanal mezcal: green agave, cooked agave, smoke and wild fermentation. The artisanal salt highlights the green agave and smoke.

The perfect combination of Espadín mezcal is:

  • With avocado salt and green or yellow tomatoes to bring out the herbaceous notes of green agave from the wild and fresh cut grass.
  • With hibiscus salt and red tomatoes to bring out the earthy, ashy, smoky notes of firewood.
